A hearty, plant-based “steak” made from Lion’s Mane mushrooms, known for their meaty texture and rich umami flavor.

Ingredients
- 1 large Lion’s Mane mushroom (8–12 oz)
- 2 tablespoons olive oil or avocado oil
- 1 tablespoon butter or vegan butter
- 2 cloves garlic, smashed
- 1 sprig fresh thyme or rosemary
- Salt, to taste
- Freshly ground black pepper
- 1 teaspoon soy sauce or tamari (optional)
- 1 teaspoon lemon juice (optional)
Instructions
- Prepare the Mushroom
Gently brush off any dirt from the mushroom. Do not soak in water. Trim the base if needed and slice into thick slabs (about ¾–1 inch) to resemble steaks. - Heat the Pan
Heat a heavy skillet (preferably cast iron) over medium heat. Add olive oil and allow it to heat until shimmering. - Sear the Steaks
Place mushroom slices in the pan in a single layer. Lightly press with a spatula to release moisture. Cook for 4–5 minutes per side until golden brown and crisp. - Baste for Flavor
Lower the heat slightly. Add butter, garlic, and herbs. Spoon the melted butter over the mushrooms for 1–2 minutes to infuse flavor. - Season and Finish
Season with salt and black pepper. Add soy sauce or tamari and lemon juice if using. Remove garlic and herbs before serving.
