A hearty, plant-based “steak” made from Lion’s Mane mushrooms, known for their meaty texture and rich umami flavor.

Ingredients

  • 1 large Lion’s Mane mushroom (8–12 oz)
  • 2 tablespoons olive oil or avocado oil
  • 1 tablespoon butter or vegan butter
  • 2 cloves garlic, smashed
  • 1 sprig fresh thyme or rosemary
  • Salt, to taste
  • Freshly ground black pepper
  • 1 teaspoon soy sauce or tamari (optional)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Prepare the Mushroom
    Gently brush off any dirt from the mushroom. Do not soak in water. Trim the base if needed and slice into thick slabs (about ¾–1 inch) to resemble steaks.
  2. Heat the Pan
    Heat a heavy skillet (preferably cast iron) over medium heat. Add olive oil and allow it to heat until shimmering.
  3. Sear the Steaks
    Place mushroom slices in the pan in a single layer. Lightly press with a spatula to release moisture. Cook for 4–5 minutes per side until golden brown and crisp.
  4. Baste for Flavor
    Lower the heat slightly. Add butter, garlic, and herbs. Spoon the melted butter over the mushrooms for 1–2 minutes to infuse flavor.
  5. Season and Finish
    Season with salt and black pepper. Add soy sauce or tamari and lemon juice if using. Remove garlic and herbs before serving.
